This easy blueberry cheesecake is a delightful dessert with a creamy filling and a sweet blueberry topping.

For the Crust:
- 1 1/2 cups graham cracker crumbs
- 1/2 cup melted butter
- 3/4 cup sugar, divided
- 2 (8 ounce) packages cream cheese, softened
- 2 eggs
- 1 teaspoon vanilla extract
- 1 cup fresh blueberries
Instructions
1. Prepare the Crust:
- Preheat the oven to 325°F (165°C).
- In a bowl, combine graham cracker crumbs, melted butter, and 1/4 cup of sugar. Press into the bottom of a 9-inch springform pan.
- In a large bowl, beat the cream cheese and remaining 1/2 cup of sugar until smooth. Add eggs, one at a time, then stir in vanilla extract.
- Pour the cream cheese mixture over the prepared crust. Sprinkle blueberries on top.
- Bake in the preheated oven for 30 minutes. Allow to cool, then refrigerate for at least 4 hours before serving.
