This easy blueberry cheesecake is a delightful dessert with a creamy filling and a sweet blueberry topping.

For the Crust:

  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup melted butter
  • 3/4 cup sugar, divided
  • 2 (8 ounce) packages cream cheese, softened
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 cup fresh blueberries

Instructions

1. Prepare the Crust:

  1. Preheat the oven to 325°F (165°C).
  2. In a bowl, combine graham cracker crumbs, melted butter, and 1/4 cup of sugar. Press into the bottom of a 9-inch springform pan.
  3. In a large bowl, beat the cream cheese and remaining 1/2 cup of sugar until smooth. Add eggs, one at a time, then stir in vanilla extract.
  4. Pour the cream cheese mixture over the prepared crust. Sprinkle blueberries on top.
  5. Bake in the preheated oven for 30 minutes. Allow to cool, then refrigerate for at least 4 hours before serving.

You can customize the seasonings to taste.
