For the Crust:
- 1 cup butter, softened
- 1 cup sugar
- 1 egg
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup cream cheese, softened
- 1/3 cup blueberry jam
Instructions
1. Prepare the Crust:
- Preheat oven to 350Β°F (175Β°C) and line a baking sheet with parchment paper.
- In a large bowl, cream together butter and sugar until light and fluffy. Beat in egg and vanilla extract.
- In another bowl, whisk together flour, baking soda, and salt. Gradually add to the butter mixture, stirring until combined.
- In a small bowl, mix cream cheese until smooth. Gently swirl in blueberry jam.
- Scoop cookie dough onto the prepared baking sheet. Using a teaspoon, make an indentation in the center of each cookie and fill with a small spoonful of the cream cheese and blueberry mixture.
- Bake for 10-12 minutes or until edges are golden. Cool on a wire rack.
