Description

Cake Layers:

2 cups mashed ripe bananas (about 4 bananas)

1 ¾ cups all-purpose flour

¾ cup unsweetened cocoa powder

1 ½ tsp baking soda

½ tsp salt

¾ cup vegetable oil

1 cup granulated sugar

½ cup brown sugar

2 large eggs

1 tsp vanilla extract

¾ cup buttermilk

Chocolate Frosting:

1 cup unsalted butter, softened

2 ½ cups powdered sugar

¾ cup unsweetened cocoa powder

½ cup heavy cream

1 tsp vanilla extract

Pinch of salt


Instructions

1. Preheat oven to 350°F (175°C). Grease and line two 8-inch round cake pans.

2. In a large bowl, whisk flour, cocoa powder, baking soda, and salt. Set aside.

3. In another bowl, mix mashed bananas, oil, both sugars, eggs, and vanilla until smooth.

4. Add dry ingredients to wet in batches, alternating with buttermilk, stirring until combined.

5. Divide batter between pans and bake for 30 to 35 minutes, or until a toothpick comes out clean. Let cool completely.

6. For frosting, beat softened butter until fluffy. Sift in cocoa powder and powdered sugar. Add cream, vanilla, and salt. Beat until smooth and spreadable.

7. Frost the cooled cakes and stack. Spread frosting evenly over sides and top. Chill 30 minutes before slicing for best results.

Notes

Use very ripe bananas for best flavor and moisture.

For extra decadence, add chocolate chips to the batter.

Cake layers can be made a day ahead and wrapped tightly for assembly later.
