For the Crust:

  • 1 cup graham cracker crumbs
  • 3 tablespoons melted butter
  • 16 oz cream cheese, softened
  • 2/3 cup sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 tablespoon lime zest
  • 2 tablespoons lime juice
  • 1 cup fresh blackberries

Instructions

1. Prepare the Crust:

  1. Preheat the oven to 325Β°F (160Β°C) and line a muffin tin with cupcake liners.
  2. Mix graham cracker crumbs with melted butter and press a tablespoon into the bottom of each liner to form the crust.
  3. In a bowl, beat the cream cheese and sugar until smooth. Add the eggs one at a time, then mix in the vanilla, lime zest, and lime juice until well combined.
  4. Divide the cheesecake batter evenly among the liners, filling each about three-quarters full. Place a few blackberries on top of each.
  5. Bake for 25-30 minutes, or until the centers are set. Allow to cool before refrigerating for at least 2 hours before serving.
