For the Crust:
- 1 cup graham cracker crumbs
- 3 tablespoons melted butter
- 16 oz cream cheese, softened
- 2/3 cup sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 tablespoon lime zest
- 2 tablespoons lime juice
- 1 cup fresh blackberries
Instructions
1. Prepare the Crust:
- Preheat the oven to 325Β°F (160Β°C) and line a muffin tin with cupcake liners.
- Mix graham cracker crumbs with melted butter and press a tablespoon into the bottom of each liner to form the crust.
- In a bowl, beat the cream cheese and sugar until smooth. Add the eggs one at a time, then mix in the vanilla, lime zest, and lime juice until well combined.
- Divide the cheesecake batter evenly among the liners, filling each about three-quarters full. Place a few blackberries on top of each.
- Bake for 25-30 minutes, or until the centers are set. Allow to cool before refrigerating for at least 2 hours before serving.
