Rich and creamy cheesecake cupcakes swirled with fresh blackberry puree and a hint of lime, perfect for a sweet treat.

For the Crust:

  • 1 cup graham cracker crumbs
  • 3 tablespoons melted butter
  • 16 oz cream cheese, softened
  • 3/4 cup sugar
  • 2 eggs
  • 1/4 cup lime juice
  • 1 teaspoon lime zest
  • 1/2 cup blackberry puree

Instructions

1. Prepare the Crust:

  1. Preheat oven to 325Β°F (160Β°C). Line a muffin tin with cupcake liners.
  2. Mix graham cracker crumbs with melted butter and press a spoonful into the bottom of each liner.
  3. Beat cream cheese and sugar until smooth. Add eggs one at a time, then mix in lime juice and zest.
  4. Divide cheesecake batter among liners, swirl in blackberry puree, and bake for 20-25 minutes until set.
  5. Cool completely and refrigerate for at least 2 hours before serving.
