For the Crust:
- 1 cup graham cracker crumbs
- 3 tablespoons melted butter
- 16 oz cream cheese, softened
- 3/4 cup sugar
- 2 eggs
- 1/4 cup lime juice
- 1 teaspoon lime zest
- 1/2 cup blackberry puree
Instructions
1. Prepare the Crust:
- Preheat oven to 325Β°F (160Β°C). Line a muffin tin with cupcake liners.
- Mix graham cracker crumbs with melted butter and press a spoonful into the bottom of each liner.
- Beat cream cheese and sugar until smooth. Add eggs one at a time, then mix in lime juice and zest.
- Divide cheesecake batter among liners, swirl in blackberry puree, and bake for 20-25 minutes until set.
- Cool completely and refrigerate for at least 2 hours before serving.
