These crispy parmesan artichoke hearts make a savory appetizer that’s both crunchy and flavorful.

For the Crust:

  • 1 can of artichoke hearts, drained and quartered
  • 1 cup grated Parmesan cheese
  • 1 cup panko breadcrumbs
  • 2 eggs
  • Salt and pepper to taste
  • Olive oil

Instructions

1. Prepare the Crust:

  1. Preheat your oven to 400Β°F (200Β°C) and line a baking sheet with parchment paper.
  2. In a bowl, mix Parmesan cheese, panko breadcrumbs, salt, and pepper.
  3. In another bowl, beat the eggs. Dip each artichoke heart in the egg, then coat with the Parmesan mixture.
  4. Place the coated artichokes on the prepared baking sheet, drizzle with olive oil, and bake for 15-20 minutes until golden and crispy.
