For the Crust:
- 1 can of artichoke hearts, drained and quartered
- 1 cup grated Parmesan cheese
- 1 cup panko breadcrumbs
- 2 eggs
- Salt and pepper to taste
- Olive oil
Instructions
1. Prepare the Crust:
- Preheat your oven to 400Β°F (200Β°C) and line a baking sheet with parchment paper.
- In a bowl, mix Parmesan cheese, panko breadcrumbs, salt, and pepper.
- In another bowl, beat the eggs. Dip each artichoke heart in the egg, then coat with the Parmesan mixture.
- Place the coated artichokes on the prepared baking sheet, drizzle with olive oil, and bake for 15-20 minutes until golden and crispy.
