For the Crust:
- 1 lb large shrimp, peeled and deveined
- 1/2 cup cornstarch
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 eggs, beaten
- Vegetable oil for frying
- 1/3 cup honey
- 2 tbsp soy sauce
- 1 tbsp rice vinegar
- 2 cloves garlic, minced
- 1 tsp grated fresh ginger
- Sliced green onions for garnish
Instructions
1. Prepare the Crust:
- Pat the shrimp dry with paper towels. In a bowl, mix cornstarch, salt, and pepper. Dip each shrimp in the beaten egg, then coat thoroughly in the cornstarch mixture.
- Heat about 1 inch of vegetable oil in a large skillet over medium-high heat. Fry the shrimp in batches for 2-3 minutes per side until golden and crispy. Drain on a paper towel-lined plate.
- In a separate saucepan, whisk together honey, soy sauce, rice vinegar, garlic, and ginger. Bring to a simmer over medium heat and cook for 2-3 minutes until slightly thickened.
- Toss the crispy shrimp in the honey glaze until evenly coated. Garnish with sliced green onions and serve immediately.
