For the Crust:

  • 1 lb large shrimp, peeled and deveined
  • 1/2 cup cornstarch
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 eggs, beaten
  • Vegetable oil for frying
  • 1/3 cup honey
  • 2 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 2 cloves garlic, minced
  • 1 tsp grated fresh ginger
  • Sliced green onions for garnish

Instructions

1. Prepare the Crust:

  1. Pat the shrimp dry with paper towels. In a bowl, mix cornstarch, salt, and pepper. Dip each shrimp in the beaten egg, then coat thoroughly in the cornstarch mixture.
  2. Heat about 1 inch of vegetable oil in a large skillet over medium-high heat. Fry the shrimp in batches for 2-3 minutes per side until golden and crispy. Drain on a paper towel-lined plate.
  3. In a separate saucepan, whisk together honey, soy sauce, rice vinegar, garlic, and ginger. Bring to a simmer over medium heat and cook for 2-3 minutes until slightly thickened.
  4. Toss the crispy shrimp in the honey glaze until evenly coated. Garnish with sliced green onions and serve immediately.
