For the Crust:
- 1 1/2 cups graham cracker crumbs
- 1/4 cup melted butter
- 2 tablespoons sugar
- 3 (8 oz) packages cream cheese, softened
- 1 cup sugar
- 3 large eggs
- 1/4 cup brewed coffee, cooled
- 1 teaspoon vanilla extract
- 1 cup sour cream
Instructions
1. Prepare the Crust:
- Preheat oven to 325Β°F (165Β°C). Mix graham cracker crumbs, melted butter, and 2 tablespoons sugar. Press into the bottom of a 9-inch springform pan.
- Beat cream cheese and 1 cup sugar until smooth. Add eggs one at a time, blending thoroughly. Mix in cooled coffee and vanilla. Pour over crust.
- Bake for 45-50 minutes. Allow to cool, then refrigerate for at least 4 hours before serving.
