For the Crust:

  • 2 cans of cannellini beans, drained and rinsed
  • 4 cups fresh spinach
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • Salt and pepper to taste

Instructions

1. Prepare the Crust:

  1. In a large pot, sautΓ© the chopped onion and minced garlic until soft.
  2. Add the cannellini beans, vegetable broth, salt, and pepper, and bring to a boil.
  3. Reduce the heat, add the spinach, and let it simmer for 10 minutes. Blend the soup until smooth, mix in the heavy cream, and serve warm.

You can customize the seasonings to taste.
