Creamy Cajun Chicken Pasta

A rich and flavorful pasta dish featuring tender chicken and bell peppers in a creamy, spicy Cajun sauce.

For the Crust:

  • 1 lb boneless, skinless chicken breast, sliced into strips
  • 8 oz fettuccine pasta
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 small onion, sliced
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 2 tbsp Cajun seasoning
  • 1/2 cup grated parmesan cheese
  • 2 tbsp olive oil
  • Salt and black pepper to taste

Instructions

1. Prepare the Crust:

  1. Bring a large pot of salted water to a boil and cook the fettuccine according to package directions. Drain and set aside.
  2. While the pasta cooks, heat olive oil in a large skillet over medium-high heat. Season the chicken strips with salt, pepper, and half of the Cajun seasoning. Add to the skillet and cook until browned and cooked through, about 6-7 minutes. Remove chicken and set aside.
  3. In the same skillet, add the sliced bell peppers and onion. SautΓ© for 4-5 minutes until they begin to soften. Add the garlic and cook for another minute until fragrant.
  4. Pour in the chicken broth to deglaze the pan, scraping up any browned bits. Stir in the heavy cream and the remaining Cajun seasoning. Bring to a simmer.
  5. Reduce heat to low and stir in the parmesan cheese until melted and the sauce is smooth. Return the cooked chicken and any accumulated juices to the skillet. Add the cooked pasta and toss everything together until well coated and heated through. Serve immediately.

You can customize the seasonings to taste.
