For the Crust:

  • 1 cup mashed ripe bananas
  • 4 oz cream cheese, softened
  • 1/3 cup vegetable oil
  • 2/3 cup sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Instructions

1. Prepare the Crust:

  1. Preheat your oven to 350Β°F (175Β°C) and grease a 9Γ—5 inch loaf pan.
  2. In a large bowl, beat together the cream cheese, vegetable oil, and sugar until smooth.
  3. Add the eggs one at a time, mixing well after each addition, then stir in the mashed bananas and vanilla extract.
  4. In another bowl, combine the flour, baking powder, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing just until combined.
  6. Pour the batter into the prepared loaf pan and bake for 30 minutes or until a toothpick inserted into the center comes out clean.
  7. Let the bread cool in the pan for a few minutes before transferring to a wire rack to cool completely.
