For the Crust:
- 1 cup mashed ripe bananas
- 4 oz cream cheese, softened
- 1/3 cup vegetable oil
- 2/3 cup sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
Instructions
1. Prepare the Crust:
- Preheat your oven to 350Β°F (175Β°C) and grease a 9Γ5 inch loaf pan.
- In a large bowl, beat together the cream cheese, vegetable oil, and sugar until smooth.
- Add the eggs one at a time, mixing well after each addition, then stir in the mashed bananas and vanilla extract.
- In another bowl, combine the flour, baking powder, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing just until combined.
- Pour the batter into the prepared loaf pan and bake for 30 minutes or until a toothpick inserted into the center comes out clean.
- Let the bread cool in the pan for a few minutes before transferring to a wire rack to cool completely.
