These soft and chewy cookies are filled with chunks of chocolate sandwich cookies for a delightful treat.

For the Crust:
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1 egg
- 1 teaspoon vanilla extract
- 1 cup crushed chocolate sandwich cookies
Instructions
1. Prepare the Crust:
- Preheat the oven to 350°F (175°C). Grease or line a baking sheet.
- In a large bowl, cream together softened butter and sugar until light and fluffy. Beat in the egg and vanilla extract.
- In another bowl, whisk together the flour, baking soda, and salt. Gradually add to the creamed mixture and mix until just combined.
- Fold in the crushed chocolate sandwich cookies. Drop dough by rounded tablespoons onto the prepared baking sheet.
- Bake for 10-12 minutes or until edges are lightly browned. Cool on the baking sheet for a couple of minutes before transferring to wire racks to cool completely.
