These soft and chewy cookies are filled with chunks of chocolate sandwich cookies for a delightful treat.

For the Crust:

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 cup crushed chocolate sandwich cookies

Instructions

1. Prepare the Crust:

  1. Preheat the oven to 350°F (175°C). Grease or line a baking sheet.
  2. In a large bowl, cream together softened butter and sugar until light and fluffy. Beat in the egg and vanilla extract.
  3. In another bowl, whisk together the flour, baking soda, and salt. Gradually add to the creamed mixture and mix until just combined.
  4. Fold in the crushed chocolate sandwich cookies. Drop dough by rounded tablespoons onto the prepared baking sheet.
  5. Bake for 10-12 minutes or until edges are lightly browned. Cool on the baking sheet for a couple of minutes before transferring to wire racks to cool completely.

Notes

You can customize the seasonings to taste.
