These indulgent red velvet brownies are rich, chocolatey, and topped with a creamy cookies and cream layer.

For the Crust:

  • 1 cup unsalted butter, melted
  • 2 cups granulated sugar
  • 2 teaspoons vanilla extract
  • 4 large eggs
  • 1 1/4 cups all-purpose flour
  • 1/4 cup cocoa powder
  • 1 teaspoon red food coloring
  • 1/2 teaspoon salt
  • 10 sandwich cookies, crushed
  • 1 cup cream cheese, softened
  • 1/2 cup powdered sugar

Instructions

1. Prepare the Crust:

  1. Preheat your oven to 350Β°F (175Β°C) and grease a 9Γ—13 inch baking dish.
  2. In a large bowl, combine the melted butter, sugar, vanilla extract, eggs, red food coloring, and mix until smooth.
  3. Add the flour, cocoa powder, and salt to the wet ingredients and mix until just combined.
  4. Fold in half of the crushed sandwich cookies into the batter.
  5. Pour the batter into the prepared baking dish and spread evenly.
  6. In a separate bowl, beat the cream cheese and powdered sugar until smooth.
  7. Spread the cream cheese mixture over the brownie batter and sprinkle with the remaining crushed cookies.
  8. Bake for 25-30 minutes or until the edges are set and the center is slightly jiggly.
  9. Let the brownies cool completely in the pan before slicing and serving.
