For the Crust:
- 1 cup unsalted butter, melted
- 2 cups granulated sugar
- 2 teaspoons vanilla extract
- 4 large eggs
- 1 1/4 cups all-purpose flour
- 1/4 cup cocoa powder
- 1 teaspoon red food coloring
- 1/2 teaspoon salt
- 10 sandwich cookies, crushed
- 1 cup cream cheese, softened
- 1/2 cup powdered sugar
Instructions
1. Prepare the Crust:
- Preheat your oven to 350Β°F (175Β°C) and grease a 9Γ13 inch baking dish.
- In a large bowl, combine the melted butter, sugar, vanilla extract, eggs, red food coloring, and mix until smooth.
- Add the flour, cocoa powder, and salt to the wet ingredients and mix until just combined.
- Fold in half of the crushed sandwich cookies into the batter.
- Pour the batter into the prepared baking dish and spread evenly.
- In a separate bowl, beat the cream cheese and powdered sugar until smooth.
- Spread the cream cheese mixture over the brownie batter and sprinkle with the remaining crushed cookies.
- Bake for 25-30 minutes or until the edges are set and the center is slightly jiggly.
- Let the brownies cool completely in the pan before slicing and serving.
