For the Crust:
- 2 cups crushed chocolate chip cookies
- 3 tablespoons melted butter
- 3 8-ounce packages cream cheese, softened
- 1 cup sugar
- 3 large eggs
- 1 teaspoon vanilla extract
- 1 cup chopped cookies
Instructions
1. Prepare the Crust:
- Preheat the oven to 325Β°F (160Β°C).
- Mix the crushed cookies and butter and press into a greased 9-inch springform pan to form the crust.
- In a large bowl, beat the cream cheese and sugar until creamy. Add the eggs one at a time, mixing well, then add the vanilla.
- Fold in the chopped cookies and pour the mixture over the crust.
- Bake for 45-50 minutes, or until the center is set. Let it cool before refrigerating for at least 4 hours.
