For the Crust:

  • 1 lb shrimp, peeled and deveined
  • 1 can (14 oz) coconut milk
  • 3 cups chicken broth
  • 1 red bell pepper, sliced
  • 2 cloves garlic, minced
  • 1 tbsp ginger, grated
  • 1 tbsp lime juice
  • Salt and pepper to taste
  • Cilantro for garnish

Instructions

1. Prepare the Crust:

  1. Heat a pot over medium heat and add the garlic and ginger, sautΓ©ing until fragrant.
  2. Add the chicken broth, coconut milk, and red bell pepper. Bring to a simmer.
  3. Add the shrimp and lime juice, cooking until shrimp are opaque and cooked through. Season with salt and pepper.
  4. Remove from heat, garnish with cilantro, and serve hot.
