Coconut Pineapple Banana Bread is a moist, tropical loaf packed with ripe bananas, crushed pineapple, and shredded coconut. Itβs sweet, satisfying, and full of flavor in every bite.
Ingredients
2 large ripe bananas, mashed
1/2 cup crushed pineapple (drained slightly)
1/3 cup melted coconut oil (or vegetable oil)
2 large eggs
1/2 cup granulated sugar
1/4 cup brown sugar
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon cinnamon
1/2 cup shredded sweetened coconut, plus more for topping
Instructions
1. Preheat oven to 350Β°F (177Β°C). Grease and flour a 9Γ5-inch loaf pan.
2. In a large bowl, whisk together mashed bananas, crushed pineapple, coconut oil, eggs, sugars, and vanilla.
3. In a separate bowl, whisk flour, baking soda, salt, and cinnamon.
4. Gently stir dry ingredients into wet mixture until just combined. Do not overmix.
5. Fold in shredded coconut.
6. Pour batter into prepared pan and sprinkle extra coconut on top if desired.
7. Bake for 50β60 minutes or until a toothpick inserted in the center comes out clean.
8. Cool in pan 10 minutes, then transfer to a wire rack to cool completely.
Notes
Use very ripe bananas for maximum flavor and natural sweetness.
Let the bread rest overnight for deeper flavor and better slicing.
Wrap and store at room temperature for up to 3 days or freeze for longer storage.
