For the Crust:

  • 1 cup unsalted butter, softened
  • 1 cup sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 8 oz cream cheese, softened
  • 1/4 cup powdered sugar
  • 1 teaspoon cinnamon

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350Β°F (175Β°C) and line a baking sheet with parchment paper.
  2. In a large bowl, cream together the butter and sugar until light and fluffy. Add eggs and vanilla and mix well.
  3. In another bowl, whisk together flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until combined.
  4. In a separate small bowl, mix cream cheese, powdered sugar, and cinnamon until smooth.
  5. Scoop out tablespoonfuls of cookie dough, flatten slightly, and place a small dollop of the cream cheese mixture in the center. Fold the dough around the cream cheese to encase it completely.
  6. Place cookies onto the prepared baking sheet and bake for 12-15 minutes until edges are golden. Allow to cool before serving.
