For the Crust:
- 1 cup unsalted butter, softened
- 1 cup sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 3 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 8 oz cream cheese, softened
- 1/4 cup powdered sugar
- 1 teaspoon cinnamon
Instructions
1. Prepare the Crust:
- Preheat oven to 350Β°F (175Β°C) and line a baking sheet with parchment paper.
- In a large bowl, cream together the butter and sugar until light and fluffy. Add eggs and vanilla and mix well.
- In another bowl, whisk together flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until combined.
- In a separate small bowl, mix cream cheese, powdered sugar, and cinnamon until smooth.
- Scoop out tablespoonfuls of cookie dough, flatten slightly, and place a small dollop of the cream cheese mixture in the center. Fold the dough around the cream cheese to encase it completely.
- Place cookies onto the prepared baking sheet and bake for 12-15 minutes until edges are golden. Allow to cool before serving.
