A decadent chocolate cheesecake topped with fresh strawberries, perfect for special occasions.

For the Crust:
- 2 cups chocolate cookie crumbs
- 3 tbsp unsalted butter, melted
- 24 oz cream cheese, softened
- 1 cup sugar
- 1 tsp vanilla extract
- 3 large eggs
- 1 cup sour cream
- 8 oz semi-sweet chocolate, melted
- 1 cup fresh strawberries, sliced
Instructions
1. Prepare the Crust:
- Preheat the oven to 325Β°F (165Β°C).
- Mix the chocolate cookie crumbs and melted butter; press into the bottom of a 9-inch springform pan.
- Beat cream cheese, sugar, and vanilla extract in a large bowl until smooth. Add eggs one at a time, mixing well after each. Stir in sour cream and melted chocolate until fully combined.
- Pour cheesecake mixture over crust in the pan. Bake for 50 minutes, or until center is set. Let cool before refrigerating for at least 4 hours.
- Before serving, arrange sliced strawberries on top of the cheesecake.
