For the Crust:
- 1 1/2 cups chocolate cookie crumbs
- 3 tablespoons unsalted butter, melted
- 24 oz cream cheese, softened
- 1 cup granulated sugar
- 3 large eggs
- 1 teaspoon vanilla extract
- 1 cup fresh strawberries, sliced
- 1/2 cup chocolate chips, melted
Instructions
1. Prepare the Crust:
- Preheat oven to 325Β°F (165Β°C). In a bowl, combine chocolate cookie crumbs and melted butter. Press mixture into the bottom of a 9-inch springform pan.
- In a large mixing bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, mixing well after each. Stir in vanilla extract. Pour mixture over the crust.
- Bake for 30 minutes. Cool completely, then spread melted chocolate over the top and arrange strawberries. Refrigerate before serving.
