For the Crust:

  • 1 1/2 cups all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon baking soda
  • 1 cup unsalted butter, softened
  • 1 1/2 cups granulated sugar
  • 4 large eggs
  • 2 teaspoons vanilla extract
  • 1/2 cup sour cream

Instructions

1. Prepare the Crust:

  1. Preheat oven to 325°F (165°C). Grease and flour a 9×5 inch loaf pan.
  2. In a medium bowl, whisk together the flour, cocoa powder, salt, and baking soda. Set aside.
  3. In a large bowl, cream the butter and sugar together until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla.
  4. Gradually blend in the flour mixture, alternating with the sour cream, until just combined. Pour the batter into the prepared pan.
  5. Bake for 60-70 minutes, or until a toothpick inserted into the center comes out clean. Let cool in the pan for 20 minutes before inverting onto a wire rack to cool completely.
