For the Crust:

  • 1 cup unsweetened cocoa powder
  • 2 cups all-purpose flour
  • 1 and 1/2 cups sugar
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 2 large eggs
  • 1 cup whole milk
  • 1/2 cup vegetable oil
  • 2 tsp vanilla extract
  • 1 cup boiling water
  • 1 cup creamy peanut butter
  • 1/2 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 1/4 cup heavy cream

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350Β°F and grease two 9-inch round cake pans.
  2. In a large bowl, whisk together cocoa powder, flour, sugar, baking powder, baking soda, and salt.
  3. Add eggs, milk, vegetable oil, and vanilla extract to the dry ingredients and mix until smooth.
  4. Stir in boiling water until well combined, then pour the batter evenly into prepared pans.
  5. Bake for 25-30 minutes or until a toothpick comes out clean. Allow to cool completely.
  6. For the frosting, beat peanut butter and butter until creamy. Gradually add powdered sugar and mix until smooth.
  7. Slowly add heavy cream and continue beating until fluffy.
  8. Assemble the cake by spreading peanut butter frosting between layers and on top.
