Chocolate Cake with Strawberry Filling Layers

A decadent and moist chocolate cake layered with a sweet, homemade strawberry filling and rich chocolate frosting.

For the Crust:

  • 2 cups all-purpose flour
  • 2 cups granulated sugar
  • 3/4 cup unsweetened cocoa powder
  • 2 teaspoons baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 2 large eggs
  • 1 cup buttermilk
  • 1 cup strong black coffee, cooled
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 2 cups fresh strawberries, diced
  • 1/4 cup granulated sugar (for filling)
  • 1 tablespoon cornstarch
  • 2 cups chocolate frosting

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350Β°F (175Β°C). Grease and flour two 9-inch round cake pans.
  2. In a large bowl, whisk together flour, 2 cups sugar, cocoa powder, baking soda, baking powder, and salt. Add eggs, buttermilk, coffee, oil, and vanilla. Beat on medium speed for 2 minutes until smooth. Divide batter evenly between the prepared pans.
  3. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean. Let cool in pans for 10 minutes, then remove to a wire rack to cool completely.
  4. For the filling, combine diced strawberries and 1/4 cup sugar in a saucepan. Cook over medium heat until berries release their juices. Mix cornstarch with 1 tablespoon of water to create a slurry, then stir into the strawberry mixture. Cook until thickened, about 2-3 minutes. Remove from heat and let cool completely.
  5. To assemble, place one cake layer on a serving plate. Spread the cooled strawberry filling evenly over the top. Place the second cake layer on top. Frost the top and sides of the entire cake with chocolate frosting.
