Description
Cherry Pistachio Cheesecake Bars are the perfect blend of tart, nutty, and creamy. A crunchy pistachio graham crust holds a rich cheesecake layer swirled with cherry preserves, topped with chopped pistachios for a stunning, flavorful finish.
Ingredients
Crust:
1 ½ cups graham cracker crumbs
½ cup finely chopped pistachios
¼ cup granulated sugar
½ cup melted butter
Cheesecake Layer:
16 oz cream cheese, softened
½ cup granulated sugar
2 large eggs
1 tsp vanilla extract
½ cup sour cream
Cherry Swirl & Topping:
½ cup cherry preserves or cherry pie filling
¼ cup chopped pistachios
Instructions
1. Preheat oven to 325°F (160°C). Line a 9×9-inch pan with parchment paper.
2. In a bowl, mix graham crumbs, pistachios, sugar, and melted butter. Press into the pan to form a crust. Bake for 10 minutes and let cool.
3. In a large bowl, beat cream cheese until smooth. Add sugar and mix well. Add eggs one at a time, then vanilla and sour cream until just combined.
4. Pour the cheesecake mixture over the crust. Drop spoonfuls of cherry preserves on top and gently swirl with a knife.
5. Sprinkle chopped pistachios over the top.
6. Bake for 35–40 minutes or until the center is just set. Cool completely, then chill at least 4 hours before slicing into bars.
Notes
Use roasted, unsalted pistachios for the best flavor.
You can swap cherry preserves for raspberry or strawberry.
Best enjoyed chilled for clean slices and rich flavor.
