For the Crust:
- 1 1/2 cups graham cracker crumbs
- 1/4 cup unsalted butter, melted
- 24 oz cream cheese, softened
- 1 cup granulated sugar
- 3 large eggs
- 1 teaspoon vanilla extract
- 1 tablespoon lemon zest
- 2 tablespoons lemon juice
- 1/2 cup sour cream
- 1 can (21 oz) cherry pie filling
Instructions
1. Prepare the Crust:
- Preheat oven to 325°F (160°C). In a bowl, mix graham cracker crumbs and melted butter. Press into the bottom of a 9-inch springform pan.
- In a large bowl, beat cream cheese and sugar until smooth. Beat in eggs one at a time. Stir in vanilla, lemon zest, and lemon juice until well combined.
- Pour the cream cheese mixture over the crust. Bake for 45-50 minutes or until the center is set. Let cool. Top with sour cream then chill in the refrigerator for at least 4 hours. Top with cherry pie filling before serving.
