Cherry Lemon Cheesecake

A delightful cheesecake with a tangy lemon flavor and a cherry topping.

For the Crust:

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup unsalted butter, melted
  • 24 oz cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon zest
  • 2 tablespoons lemon juice
  • 1/2 cup sour cream
  • 1 can (21 oz) cherry pie filling

Instructions

1. Prepare the Crust:

  1. Preheat oven to 325°F (160°C). In a bowl, mix graham cracker crumbs and melted butter. Press into the bottom of a 9-inch springform pan.
  2. In a large bowl, beat cream cheese and sugar until smooth. Beat in eggs one at a time. Stir in vanilla, lemon zest, and lemon juice until well combined.
  3. Pour the cream cheese mixture over the crust. Bake for 45-50 minutes or until the center is set. Let cool. Top with sour cream then chill in the refrigerator for at least 4 hours. Top with cherry pie filling before serving.
