For the Crust:
- 1 lb chicken breast, cubed
- 2 cups fresh cheese tortellini
- 1 tablespoon Cajun seasoning
- 2 cloves garlic, minced
- 1 cup Velveeta cheese, cubed
- 1 cup heavy cream
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
1. Prepare the Crust:
- In a large skillet, heat olive oil over medium-high heat. Add chicken cubes and Cajun seasoning, cooking until the chicken is browned and cooked through.
- Add minced garlic and cook for another minute. Reduce heat to low and stir in heavy cream and Velveeta cheese cubes, cooking until the cheese is melted and the sauce is smooth.
- Meanwhile, cook the tortellini according to package instructions. Drain and add to the skillet, stirring until well combined with the cheesy sauce. Season with salt and pepper to taste and serve warm.
