A decadent and sweet side dish featuring tender roasted sweet potatoes, a buttery brown sugar glaze, toasted pecans, and gooey marshmallows.

For the Crust:

  • 2 large sweet potatoes, peeled and cut into 1-inch cubes
  • 3 tablespoons unsalted butter, melted
  • 1/4 cup brown sugar, packed
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1 cup mini marshmallows
  • 1/2 cup chopped pecans

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400Β°F (200Β°C). Line a baking sheet with parchment paper.
  2. In a large bowl, toss the sweet potato cubes with melted butter, brown sugar, cinnamon, and salt until evenly coated.
  3. Spread the sweet potatoes in a single layer on the prepared baking sheet. Roast for 25-30 minutes, or until tender and caramelized around the edges.
  4. Remove from oven. Scatter the mini marshmallows and chopped pecans over the top. Return to the oven for 3-5 minutes, or until the marshmallows are puffed and golden.
  5. Let cool for a few minutes before serving warm.

Notes

You can customize the seasonings to taste.
