For the Crust:
- 2 large sweet potatoes, peeled and cut into 1-inch cubes
- 3 tablespoons unsalted butter, melted
- 1/4 cup brown sugar, packed
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 1 cup mini marshmallows
- 1/2 cup chopped pecans
Instructions
1. Prepare the Crust:
- Preheat oven to 400Β°F (200Β°C). Line a baking sheet with parchment paper.
- In a large bowl, toss the sweet potato cubes with melted butter, brown sugar, cinnamon, and salt until evenly coated.
- Spread the sweet potatoes in a single layer on the prepared baking sheet. Roast for 25-30 minutes, or until tender and caramelized around the edges.
- Remove from oven. Scatter the mini marshmallows and chopped pecans over the top. Return to the oven for 3-5 minutes, or until the marshmallows are puffed and golden.
- Let cool for a few minutes before serving warm.
