For the Crust:

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup melted butter
  • 2 (8 oz) packages cream cheese, softened
  • 1 cup canned pumpkin puree
  • 1/2 cup granulated sugar
  • 1 tsp vanilla extract
  • 1 tsp pumpkin pie spice
  • 2 large eggs
  • 1/2 cup caramel sauce

Instructions

1. Prepare the Crust:

  1. Preheat oven to 325Β°F (165Β°C). Mix graham cracker crumbs and melted butter, then press into a 9-inch springform pan to form the crust.
  2. In a large bowl, beat cream cheese until smooth. Add pumpkin, sugar, vanilla, and pumpkin pie spice, blending well.
  3. Beat in eggs one at a time until fully incorporated. Pour filling over the crust and smooth the top.
  4. Bake for 45-50 minutes or until the center is set. Let cool, then refrigerate for at least 4 hours.
  5. Drizzle with caramel sauce before serving.
