For the Crust:
- 1 1/2 cups graham cracker crumbs
- 1/4 cup melted butter
- 2 (8 oz) packages cream cheese, softened
- 1 cup canned pumpkin puree
- 1/2 cup granulated sugar
- 1 tsp vanilla extract
- 1 tsp pumpkin pie spice
- 2 large eggs
- 1/2 cup caramel sauce
Instructions
1. Prepare the Crust:
- Preheat oven to 325Β°F (165Β°C). Mix graham cracker crumbs and melted butter, then press into a 9-inch springform pan to form the crust.
- In a large bowl, beat cream cheese until smooth. Add pumpkin, sugar, vanilla, and pumpkin pie spice, blending well.
- Beat in eggs one at a time until fully incorporated. Pour filling over the crust and smooth the top.
- Bake for 45-50 minutes or until the center is set. Let cool, then refrigerate for at least 4 hours.
- Drizzle with caramel sauce before serving.
