Description
Butternut Squash Spinach Lasagna is a cozy, meatless meal layered with roasted butternut squash puree, fresh spinach, creamy béchamel, and melted cheese. It’s perfect for fall gatherings or hearty weeknight dinners.
Ingredients
9 lasagna noodles (regular or no-boil)
3 cups roasted butternut squash puree
2 tablespoons olive oil
3 garlic cloves, minced
4 cups fresh spinach, chopped
2 cups ricotta cheese
1/4 teaspoon ground nutmeg
Salt and pepper, to taste
1.5 cups shredded mozzarella
1/2 cup grated parmesan cheese
2 tablespoons butter
2 tablespoons all-purpose flour
2 cups milk (whole or 2%)
1/4 teaspoon black pepper
Instructions
1. Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
2. Boil lasagna noodles until al dente if not using no-boil. Drain and set aside.
3. In a pan, heat olive oil and sauté garlic until fragrant. Add spinach and cook until wilted. Season with salt and pepper.
4. In a bowl, mix ricotta, nutmeg, and a pinch of salt. Set aside.
5. To make béchamel: Melt butter in a saucepan, whisk in flour to form a roux. Slowly add milk, whisking constantly until smooth and thickened. Season with pepper.
6. Assemble: Spread a thin layer of béchamel on the bottom. Layer noodles, squash puree, spinach, ricotta, béchamel, and mozzarella. Repeat layers, ending with noodles, béchamel, mozzarella, and parmesan.
7. Cover with foil and bake for 25 minutes. Uncover and bake 10–15 minutes more until bubbly and golden.
8. Let rest 10 minutes before slicing and serving.
Notes
You can roast fresh butternut squash or use canned puree.
Add caramelized onions or mushrooms for extra depth.
Store leftovers refrigerated up to 4 days or freeze for up to 2 months.
