For the Crust:
- 1 medium butternut squash, peeled and cubed
- 1 lb Brussels sprouts, trimmed and halved
- 3 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp smoked paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 tbsp maple syrup (optional)
Instructions
1. Prepare the Crust:
- Preheat oven to 400Β°F (200Β°C). Line a baking sheet with parchment paper.
- In a large bowl, toss butternut squash and Brussels sprouts with olive oil, garlic powder, smoked paprika, salt, and pepper until evenly coated.
- Spread the vegetables in a single layer on the prepared baking sheet. Roast for 25-30 minutes, stirring halfway, until tender and caramelized.
- Drizzle with maple syrup (if using) and toss gently before serving.
