For the Crust:

  • 2 cups all-purpose flour
  • 2 tablespoons sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups buttermilk
  • 2 large eggs
  • 1/4 cup unsalted butter, melted
  • 1 teaspoon vanilla extract

Instructions

1. Prepare the Crust:

  1. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  2. In another bowl, mix the buttermilk, eggs, melted butter, and vanilla extract. Pour the wet ingredients into the dry and stir until just combined.
  3. Heat a non-stick skillet over medium heat and grease lightly. Pour batter onto the skillet and cook until bubbles form on the surface; flip and cook until browned on the other side.
