Ingredients
1 cup creamy peanut butter
1/2 cup unsalted butter, softened
2 cups powdered sugar
1/2 teaspoon vanilla extract
1 cup crushed Butterfinger candy bars
1 1/2 cups semi-sweet chocolate chips
1 tablespoon coconut oil or shortening (optional, for melting chocolate)
Instructions
1. In a large bowl, mix peanut butter, softened butter, vanilla, and powdered sugar until well combined.
2. Fold in the crushed Butterfinger pieces until evenly distributed.
3. Roll the mixture into small balls, about 1 inch each, and place on a parchment-lined tray.
4. Chill in the refrigerator for 30 minutes or until firm.
5. Melt chocolate chips and coconut oil together in the microwave or using a double boiler until smooth.
6. Dip each peanut butter ball into the melted chocolate, coating fully.
7. Place back on the parchment-lined tray and chill until set, about 15–20 minutes.
8. Store in an airtight container in the refrigerator.
Notes
Use natural or processed peanut butter, but avoid oily separation.
Butterfinger Peanut Butter Bombs can be made ahead and frozen for up to 1 month.
