Description
Burrata & Beet Sweet Potato Stacks are a visually stunning and flavor-packed dish made with layers of roasted sweet potato rounds, sliced roasted beets, creamy burrata, and fresh herbs. Finished with a drizzle of balsamic glaze, they’re perfect as an appetizer or elegant side.
Ingredients
2 medium sweet potatoes, peeled and sliced into ½-inch rounds
2 medium beets, roasted and sliced
2 tbsp olive oil
Salt and pepper, to taste
1 ball burrata cheese (4 oz), torn
1 tbsp fresh thyme leaves
1 tbsp fresh basil, chopped
2 tbsp balsamic glaze
Instructions
1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment.
2. Toss sweet potato slices with olive oil, salt, and pepper. Roast for 25 minutes, flipping halfway, until tender and slightly golden.
3. Slice roasted beets into ¼-inch rounds.
4. To assemble, layer one sweet potato round, one beet slice, and a small spoonful of torn burrata.
5. Repeat to stack 2–3 layers tall depending on size.
6. Sprinkle with fresh herbs and drizzle with balsamic glaze.
7. Serve warm or at room temperature.
Notes
Use golden and red beets for extra color contrast.
Burrata should be added just before serving for best texture.
These stacks can be prepped ahead and assembled before guests arrive.
