Brownie Refrigerator Cake

Description

A rich, no-bake dessert with layers of fudgy brownie, creamy filling, and a chocolate glaze, all set in the refrigerator for an easy and decadent treat.

For the Crust:

  • 1 (18 oz) package fudge brownie mix, baked and cooled
  • 1 (8 oz) package cream cheese, softened
  • 1/2 cup granulated sugar
  • 2 cups heavy whipping cream, divided
  • 1 tsp vanilla extract
  • 1 cup semi-sweet chocolate chips
  • 2 tbsp unsalted butter

Instructions

1. Prepare the Crust:

  1. Prepare the brownie mix according to package directions in a 9Γ—13 inch pan. Allow to cool completely, then cut into 1-inch cubes.
  2. In a large bowl, beat the softened cream cheese and sugar until smooth. In a separate bowl, whip 1 1/2 cups of heavy cream until stiff peaks form. Gently fold the whipped cream and vanilla extract into the cream cheese mixture.
  3. Arrange half of the brownie cubes in the bottom of a 9Γ—9 inch square dish. Spread the cream cheese filling evenly over the brownies. Top with the remaining brownie cubes.
  4. In a small saucepan, heat the remaining 1/2 cup of heavy cream until it just begins to simmer. Pour over the chocolate chips and butter in a heatproof bowl. Let sit for 2 minutes, then whisk until smooth to create a ganache.
  5. Pour the chocolate ganache over the top layer of brownies, spreading it to cover completely. Refrigerate for at least 4 hours, or overnight, until set. Slice and serve chilled.

Notes

You can customize the seasonings to taste.
