Description

Ingredients

2 cups all-purpose flour

1 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1/2 cup unsalted butter, softened

1 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

1 cup sour cream

1 1/4 cups fresh or frozen blueberries

Streusel Topping:

1/3 cup brown sugar

1/4 cup all-purpose flour

1/2 teaspoon cinnamon

3 tablespoons cold unsalted butter, cubed


Instructions

1. Preheat oven to 350°F (175°C). Grease a 9-inch springform pan or square baking dish.

2. In a medium bowl, whisk together flour, baking powder, baking soda, and salt.

3. In a large bowl, cream butter and sugar until light and fluffy. Beat in eggs one at a time, then add vanilla.

4. Mix in the sour cream until smooth.

5. Gradually stir in the dry ingredients until just combined. Gently fold in blueberries.

6. Pour batter into the prepared pan and smooth the top.

7. In a small bowl, combine streusel ingredients with a fork until crumbly. Sprinkle over the batter.

8. Bake for 45–50 minutes or until a toothpick inserted into the center comes out clean.

9. Cool in the pan for 15 minutes before serving. Can be served warm or at room temperature.

Notes

You can use frozen blueberries—just toss them with a little flour to prevent sinking.

Store leftovers in an airtight container at room temperature for 2–3 days.

Great for freezing! Wrap slices individually and freeze up to 2 months.
