Blackberry Shortcake Crunch Bars

Description

A delightful dessert bar with a buttery shortbread base, a sweet and tangy blackberry filling, and a crunchy oat crumble topping.

For the Crust:

  • 2 cups all-purpose flour
  • 1 cup rolled oats
  • 1 cup granulated sugar, divided
  • 1 cup (2 sticks) cold unsalted butter, cubed
  • 1 large egg
  • 3 cups fresh or frozen blackberries
  • 2 tablespoons cornstarch
  • 1 tablespoon lemon juice
  • 1/4 teaspoon salt

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375Β°F (190Β°C). Grease and line a 9Γ—9 inch baking pan with parchment paper, leaving an overhang for easy removal.
  2. In a large bowl, combine flour, oats, and 3/4 cup of the sugar. Cut in the cold butter with a pastry cutter or your fingers until the mixture resembles coarse crumbs. Reserve 1 1/2 cups of this mixture for the topping.
  3. Mix the egg into the remaining flour mixture until a soft dough forms. Press this dough evenly into the bottom of the prepared pan to form the crust.
  4. In a separate bowl, gently toss the blackberries with the remaining 1/4 cup sugar, cornstarch, lemon juice, and salt until well coated. Spread the blackberry mixture evenly over the crust.
  5. Sprinkle the reserved crumble topping evenly over the blackberry layer.
  6. Bake for 35-40 minutes, or until the topping is golden brown and the fruit filling is bubbly. Allow to cool completely in the pan on a wire rack before cutting into bars.
