For the Crust:
- 8 boneless, skinless chicken thighs
- 1/4 cup olive oil
- 3 cloves garlic, minced
- 2 tablespoons fresh lemon juice
- 1 tablespoon fresh rosemary, chopped
- 1 tablespoon fresh thyme, chopped
- 1 teaspoon lemon zest
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon red pepper flakes (optional)
Instructions
1. Prepare the Crust:
- In a large bowl, whisk together olive oil, garlic, lemon juice, rosemary, thyme, lemon zest, salt, black pepper, and red pepper flakes (if using).
- Add chicken thighs to the marinade, ensuring each piece is well coated. Cover and refrigerate for at least 2 hours, or overnight for best results.
- Preheat grill to medium-high heat (about 375Β°F). Remove chicken from marinade, letting excess drip off.
- Grill chicken thighs for 5-7 minutes per side, or until internal temperature reaches 165Β°F. Let rest for 5 minutes before serving.
