For the Crust:

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 tablespoon lemon zest
  • 2 tablespoons lemon juice
  • 1 cup fresh blueberries
  • 1/2 cup powdered sugar (for glaze)

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350Β°F (175Β°C) and grease a 9Γ—13-inch baking pan.
  2. In a large bowl, cream together butter and sugar until light and fluffy. Beat in eggs one at a time, then stir in vanilla extract.
  3. In a separate bowl, whisk together flour, baking powder, salt, and lemon zest. Gradually add the dry ingredients to the butter mixture, mixing until just combined. Fold in lemon juice and blueberries.
  4. Spread the dough evenly into the prepared baking pan. Bake for 25-30 minutes or until edges are golden and a toothpick inserted comes out clean.
  5. Let cool completely, then drizzle with powdered sugar glaze (mix powdered sugar with a little lemon juice or water). Cut into bars and serve.
