For the Crust:
- 1 lb ground chicken
- 1/4 cup breadcrumbs
- 1 egg
- 2 cloves garlic, minced
- 1 tbsp ginger, grated
- 1 tbsp fish sauce
- 1 tbsp lime juice
- 1 tbsp cilantro, chopped
- 1 can (14 oz) coconut milk
- 2 tbsp red curry paste
- 1 tbsp brown sugar
- 1 red bell pepper, sliced
- 1 tbsp vegetable oil
Instructions
1. Prepare the Crust:
- In a bowl, mix ground chicken, breadcrumbs, egg, garlic, ginger, fish sauce, lime juice, and cilantro. Form into small meatballs.
- Heat oil in a pan over medium heat. Brown meatballs on all sides, then remove and set aside.
- In the same pan, add curry paste and cook for 1 minute. Stir in coconut milk and brown sugar until smooth.
- Add bell pepper and return meatballs to the pan. Simmer for 15 minutes, or until meatballs are cooked through.
- Garnish with cilantro and serve over rice.
