Juicy chicken meatballs simmered in a fragrant coconut curry sauce, packed with Thai flavors.


Ingredients

For the Crust:

  • 1 lb ground chicken
  • 1/4 cup breadcrumbs
  • 1 egg
  • 2 cloves garlic, minced
  • 1 tbsp ginger, grated
  • 1 tbsp fish sauce
  • 1 tbsp lime juice
  • 1 tbsp cilantro, chopped
  • 1 can (14 oz) coconut milk
  • 2 tbsp red curry paste
  • 1 tbsp brown sugar
  • 1 red bell pepper, sliced
  • 1 tbsp vegetable oil

Instructions

1. Prepare the Crust:

  1. In a bowl, mix ground chicken, breadcrumbs, egg, garlic, ginger, fish sauce, lime juice, and cilantro. Form into small meatballs.
  2. Heat oil in a pan over medium heat. Brown meatballs on all sides, then remove and set aside.
  3. In the same pan, add curry paste and cook for 1 minute. Stir in coconut milk and brown sugar until smooth.
  4. Add bell pepper and return meatballs to the pan. Simmer for 15 minutes, or until meatballs are cooked through.
  5. Garnish with cilantro and serve over rice.
