For the Crust:

  • 1 head cauliflower, cut into florets
  • 1 can chickpeas, drained and rinsed
  • 2 tbsp olive oil
  • 1 tsp smoked paprika
  • 1/2 tsp cayenne pepper
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup cooked quinoa
  • 1/4 cup tahini
  • 2 tbsp lemon juice
  • 1/4 cup chopped fresh parsley

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400Β°F (200Β°C). Line a baking sheet with parchment paper.
  2. In a large bowl, toss cauliflower florets and chickpeas with olive oil, smoked paprika, cayenne pepper, garlic powder, salt, and black pepper until evenly coated.
  3. Spread the mixture onto the prepared baking sheet in a single layer. Roast for 25-30 minutes, stirring halfway, until cauliflower is tender and chickpeas are crispy.
  4. While the vegetables roast, prepare the tahini sauce by whisking together tahini, lemon juice, and 2-3 tbsp water until smooth.
  5. Assemble the bowls by dividing cooked quinoa among four bowls. Top with roasted cauliflower and chickpeas, drizzle with tahini sauce, and garnish with fresh parsley.
