A delicious and vibrant side dish featuring roasted Brussels sprouts paired with sweet mandarin oranges and a hint of balsamic glaze.

For the Crust:

  • 1 lb Brussels sprouts, trimmed and halved
  • 1 can (11 oz) mandarin oranges, drained
  • 2 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • 1 tsp honey
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp sliced almonds (optional)

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400Β°F (200Β°C). Line a baking sheet with parchment paper.
  2. In a large bowl, toss Brussels sprouts with olive oil, garlic powder, salt, and pepper until evenly coated.
  3. Spread Brussels sprouts in a single layer on the prepared baking sheet. Roast for 20-25 minutes, stirring halfway, until tender and lightly charred.
  4. In a small bowl, whisk together balsamic vinegar and honey. Drizzle over roasted Brussels sprouts and toss to coat.
  5. Gently fold in mandarin oranges and sliced almonds (if using). Serve warm.
