For the Crust:

  • 12 oz linguine pasta
  • 1 lb large shrimp, peeled and deveined
  • 1 cup fresh basil pesto
  • 2 tbsp olive oil
  • 1 lemon, juiced
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 1/4 cup grated Parmesan cheese

Instructions

1. Prepare the Crust:

  1. Cook the linguine according to package instructions until al dente. Drain and set aside.
  2. In a bowl, toss the shrimp with olive oil, lemon juice, minced garlic, salt, and pepper.
  3. Grill the shrimp over medium-high heat for 2-3 minutes per side until opaque and slightly charred.
  4. Toss the cooked pasta with the pesto until evenly coated.
  5. To assemble the stacks, layer pesto pasta and grilled shrimp alternately in a ring mold or small bowl. Garnish with Parmesan cheese.
