A spicy-sweet twist on classic cornbread, featuring fresh jalapenos and a tangy lime honey glaze.

For the Crust:
- 1 cup cornmeal
- 1 cup all-purpose flour
- 1/4 cup granulated sugar
- 1 tbsp baking powder
- 1/2 tsp salt
- 1 cup buttermilk
- 1/3 cup unsalted butter, melted
- 1 large egg
- 2 jalapenos, seeded and finely diced
- 1/4 cup honey
- 1 tbsp lime juice
- 1 tsp lime zest
Instructions
1. Prepare the Crust:
- Preheat oven to 375Β°F (190Β°C). Grease a 9-inch square baking pan.
- In a large bowl, whisk together cornmeal, flour, sugar, baking powder, and salt.
- In another bowl, mix buttermilk, melted butter, and egg. Stir into dry ingredients until just combined. Fold in diced jalapenos.
- Pour batter into prepared pan and bake for 20-25 minutes, or until a toothpick inserted comes out clean.
- While cornbread bakes, combine honey, lime juice, and lime zest in a small saucepan. Heat over low until warm and blended.
- Brush lime honey glaze over warm cornbread. Serve immediately.
