For the Crust:

  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1 cup buttermilk
  • 1/3 cup unsalted butter, melted
  • 1 large egg
  • 2 jalapenos, seeded and finely diced
  • 1/4 cup honey
  • 1 tbsp lime juice
  • 1 tsp lime zest

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375Β°F (190Β°C). Grease a 9-inch square baking pan.
  2. In a large bowl, whisk together cornmeal, flour, sugar, baking powder, and salt.
  3. In another bowl, mix buttermilk, melted butter, and egg. Stir into dry ingredients until just combined. Fold in diced jalapenos.
  4. Pour batter into prepared pan and bake for 20-25 minutes, or until a toothpick inserted comes out clean.
  5. While cornbread bakes, combine honey, lime juice, and lime zest in a small saucepan. Heat over low until warm and blended.
  6. Brush lime honey glaze over warm cornbread. Serve immediately.
