Ingredients

1 tablespoon olive oil

1/2 medium yellow onion, thinly sliced

2 cups fresh spinach, chopped

5 large eggs

1/2 cup whole milk

1/2 cup crumbled feta cheese

1/4 teaspoon salt

1/4 teaspoon black pepper

Optional: fresh herbs for garnish


Instructions

1. Preheat oven to 375°F (190°C). Grease a 9-inch pie dish with cooking spray or a thin coat of oil.

2. Heat olive oil in a skillet over medium heat. Add onions and cook until soft, about 5 minutes.

3. Add chopped spinach and cook until wilted. Remove from heat and let cool slightly.

4. In a large bowl, whisk together eggs, milk, salt, and pepper.

5. Stir in the cooled onion-spinach mixture and crumbled feta.

6. Pour mixture into the prepared pie dish and smooth the top.

7. Bake for 30–35 minutes or until the center is set and the top is lightly golden.

8. Let the quiche cool for 5–10 minutes before slicing. Garnish with fresh herbs if desired.

Notes

You can use frozen spinach, just thaw and squeeze out all moisture.

Store leftovers covered in the refrigerator for up to 4 days.
