For the Crust:

  • 4 large eggs
  • 3/4 cup granulated sugar
  • 1 tsp vanilla extract
  • 3/4 cup all-purpose flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup powdered sugar (for dusting)
  • 1 cup heavy whipping cream
  • 1/4 cup raspberry jam
  • Red and green food coloring (for decoration)

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C). Line a 10×15-inch jelly roll pan with parchment paper.
  2. In a large bowl, beat eggs and sugar until light and fluffy. Add vanilla extract.
  3. Sift flour, baking powder, and salt into the egg mixture. Gently fold until combined.
  4. Pour batter into the prepared pan, spreading evenly. Bake for 12-15 minutes until golden.
  5. Dust a clean kitchen towel with powdered sugar. Invert the cake onto the towel and carefully peel off the parchment paper.
  6. Roll the cake (with the towel) from the short end. Let cool completely on a wire rack.
  7. Whip the heavy cream until stiff peaks form. Unroll the cake, spread raspberry jam, then whipped cream. Re-roll without the towel.
  8. Decorate with festive designs using red and green food coloring. Chill before serving.
