For the Crust:
- 1 cup unsalted butter, softened
- 1 cup sugar
- 4 large eggs
- 2 cups all-purpose flour
- 1 tsp baking powder
- 1/2 tsp salt
- 1 tsp cinnamon
- 1 tsp nutmeg
- 1/2 cup milk
- 1 cup raisins
- 1 cup currants
- 1/2 cup chopped dried apricots
- 1/2 cup chopped walnuts
- 1/4 cup brandy or orange juice
Instructions
1. Prepare the Crust:
- Preheat oven to 325Β°F (160Β°C). Grease and line a 9-inch round cake pan.
- In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs one at a time.
- In another bowl, sift together the flour, baking powder, salt, cinnamon, and nutmeg. Gradually add the dry ingredients to the wet mixture, alternately with milk, starting and ending with the dry ingredients.
- Fold in the raisins, currants, apricots, walnuts, and brandy. Pour into the prepared cake pan.
- Bake for 1 hour or until a skewer inserted into the center comes out clean. Let cool in the pan for 10 minutes, then turn out onto a wire rack to cool completely.
