For the Crust:
- 3 ripe bananas, mashed
- 1 cup chopped pecans
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup buttermilk
Instructions
1. Prepare the Crust:
- Preheat the oven to 350Β°F (175Β°C). Grease and flour a 9Γ5 inch loaf pan.
- In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla and mashed bananas.
- In a separate bowl, combine the flour, baking soda, and salt. Add to the banana mixture alternately with the buttermilk, mixing until just incorporated. Fold in the pecans.
- Pour batter into the prepared loaf pan and bake for 60 to 65 minutes, or until a toothpick inserted into the center of the cake comes out clean.
- Allow the cake to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
