Banana Pecan Cake

For the Crust:

  • 3 ripe bananas, mashed
  • 1 cup chopped pecans
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup buttermilk

Instructions

1. Prepare the Crust:

  1. Preheat the oven to 350Β°F (175Β°C). Grease and flour a 9Γ—5 inch loaf pan.
  2. In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla and mashed bananas.
  3. In a separate bowl, combine the flour, baking soda, and salt. Add to the banana mixture alternately with the buttermilk, mixing until just incorporated. Fold in the pecans.
  4. Pour batter into the prepared loaf pan and bake for 60 to 65 minutes, or until a toothpick inserted into the center of the cake comes out clean.
  5. Allow the cake to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
