For the Crust:
- 1 eggplant, sliced
- 2 zucchinis, sliced
- 3 tomatoes, sliced
- 1 onion, sliced
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh basil for garnish
Instructions
1. Prepare the Crust:
- Preheat the oven to 375Β°F (190Β°C).
- In a baking dish, layer slices of eggplant, zucchini, and tomatoes. Sprinkle onion and garlic over the top.
- Drizzle olive oil over the layers and season with salt and pepper. Cover with foil and bake for 30 minutes.
