Baked Ratatouille with Tomatoes, Zucchini, and Eggplant

A classic French vegetable dish that’s oven-baked to bring out rich flavors.

For the Crust:

  • 1 eggplant, sliced
  • 2 zucchinis, sliced
  • 3 tomatoes, sliced
  • 1 onion, sliced
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

1. Prepare the Crust:

  1. Preheat the oven to 375Β°F (190Β°C).
  2. In a baking dish, layer slices of eggplant, zucchini, and tomatoes. Sprinkle onion and garlic over the top.
  3. Drizzle olive oil over the layers and season with salt and pepper. Cover with foil and bake for 30 minutes.
