Description
This Asian Chicken Cranberry Salad is packed with flavor, texture, and color. It combines juicy chicken, crisp cabbage, sweet cranberries, and a tangy sesame dressing for the perfect quick lunch or light dinner.
Ingredients
4 cups shredded napa cabbage or coleslaw mix
2 cups cooked shredded chicken (rotisserie or grilled)
1/2 cup dried cranberries
1/2 cup mandarin orange segments (drained, optional)
1/3 cup sliced almonds
1/4 cup chopped green onions
2 tablespoons sesame seeds
1/3 cup Asian sesame dressing (store-bought or homemade)
Instructions
1. In a large mixing bowl, add cabbage, chicken, cranberries, oranges, green onions, and almonds.
2. Drizzle with the sesame dressing.
3. Toss the salad thoroughly until everything is well coated.
4. Sprinkle sesame seeds over the top.
5. Serve immediately or chill for 15 minutes before serving.
Notes
For crunch, add wonton strips or chow mein noodles before serving.
Make it vegetarian by using crispy tofu instead of chicken.
Store leftovers in an airtight container for up to 2 days (dressed) or 4 days (undressed).
