For the Crust:
- 1 cup chopped pecans
- 2 cups diced apples
- 1 cup granulated sugar
- 1 cup brown sugar
- 3 large eggs
- 1/2 cup vegetable oil
- 2 teaspoons vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 1/2 teaspoon salt
- 1/2 cup butter
- 1/4 cup heavy cream
Instructions
1. Prepare the Crust:
- Preheat the oven to 350Β°F (175Β°C) and grease a 9Γ13 inch baking dish.
- In a large bowl, mix the sugars, eggs, oil, and vanilla until well combined. Stir in the flour, baking soda, cinnamon, and salt. Fold in the diced apples and pecans.
- Pour the batter into the prepared baking dish and bake for 30 minutes or until a toothpick inserted comes out clean.
- For the caramel glaze, melt the butter in a saucepan over medium heat. Add the brown sugar and cream, stirring constantly until the mixture comes to a boil. Let it boil for 2 minutes, then remove from heat and pour over the warm cake.
