Apple Pecan Cake With Caramel Glaze

For the Crust:

  • 1 cup chopped pecans
  • 2 cups diced apples
  • 1 cup granulated sugar
  • 1 cup brown sugar
  • 3 large eggs
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1/2 cup butter
  • 1/4 cup heavy cream

Instructions

1. Prepare the Crust:

  1. Preheat the oven to 350Β°F (175Β°C) and grease a 9Γ—13 inch baking dish.
  2. In a large bowl, mix the sugars, eggs, oil, and vanilla until well combined. Stir in the flour, baking soda, cinnamon, and salt. Fold in the diced apples and pecans.
  3. Pour the batter into the prepared baking dish and bake for 30 minutes or until a toothpick inserted comes out clean.
  4. For the caramel glaze, melt the butter in a saucepan over medium heat. Add the brown sugar and cream, stirring constantly until the mixture comes to a boil. Let it boil for 2 minutes, then remove from heat and pour over the warm cake.

You can customize the seasonings to taste.
