Description

Soft whoopie pies infused with apple cider, perfect for fall.


Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 cup unsalted butter, softened
  • 1 cup brown sugar
  • 1 large egg
  • 1/2 cup apple cider
  • 1 teaspoon vanilla extract
  • For the filling: 1 cup marshmallow fluff
  • 1/2 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 1 tablespoon apple cider

Instructions

  1. Preheat oven to 350Β°F (175Β°C) and line baking sheets with parchment paper.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. In a large bowl, cream together butter and brown sugar until light and fluffy. Beat in the egg, apple cider, and vanilla extract.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Drop tablespoon-sized scoops of dough onto the prepared baking sheets, spacing them about 2 inches apart.
  6. Bake for 10-12 minutes or until the edges are set. Let cool on the sheets for 5 minutes, then transfer to a wire rack to cool completely.
  7. For the filling: Beat together marshmallow fluff, butter, powdered sugar, and apple cider until smooth.
  8. Spread or pipe the filling between two cooled cookies to form sandwiches.
